Potato salad is the quintessential BBQ dish. For the longest time, I was always one to pass on the potato salad due to the massive amounts of mayonnaise and raw white onions. Last summer, I made a personal potato salad break-through!
While hosting friends and family for a small BBQ at our place, I served my version of potato salad. Some people didn't want to try it, saying, "I don't like potato salad." However, I ensured them that this wasn't the bland, mayo-based salad they were used to.
The feedback from my personal taste-testers was great! In fact, I had multiple requests for the recipe.
Given this great feedback, I've made this dish numerous time and made it for a 4th of July BBQ yesterday.
First of all, there is an entire package of bacon in the salad. Obviously, it's going to taste awesome. In addition to the bacon, I add hard-boiled eggs, green onions and parsley.
I think the real key to this recipe is roasting the potatoes with garlic and sweet white onions. Magic happens when vegetable are roasted.
I realize the end result isn't exactly jaw-dropping. Let's face it, potato salad is quite ugly. However, once you take a bite of this delightful combo, you'll never go back to the mayo-filled version.
Potato Salad Suggecipe:
- red + russet potatoes - bite-sized
- 1 onion - diced
- 2-4 garlic cloves - minced
- 8-10 hard boiled eggs - bite-sized
- lots of bacon - crumbled
- bunch of parsley - chopped
- bunch of green onions - chopped
Sauce:
- olive oil
- some apple cider vinegar
- some dijon mustard
- a little mayonnaise
- 1/2 lemon - juice
- splash of worcestershire
- s + p
Combine the potatoes, onion and garlic. Coat mixture in olive oil, s + p. Bake in a singer layer at 450 degrees for 30 minutes. Combine potato mixture with hard-boiled eggs + bacon. Mix the sauce in a separate bowl and add to potatoes, eggs + bacon. Add a big bunch of parsley and green onions. Serve warm or cold.
Whenever I make this recipe, memories of friends, family and summertime flood my mind. This potato salad does what food does best: brings people together and brings them joy (hopefully).
